We invited a friend over for dinner the other night and I was picking my brain about what to make. I had two factors in mind:
#1. Stick to something I make commonly that is reliably tasty and #2. Try to use something in the house since I wasn’t prepared for a shopping trip.
There were two things in the freezer – steak and tilapia. I took out both (I usually make two main dishes for strangers because I am always uncomfortable not knowing what someone likes), but the steak just wasn’t going to thaw in time.
I really wanted to make the tilapia interesting, and so I threw away my first rule about making something common and decided to try a new recipe!
If you’re like me and just bookmark sites like crazy when you find something of interest without a thought of organizing them, then you can picture me scrolling through a lot of links to find a great recipe I came across the other day from Kalyn’s Kitchen: almond and parmesan tilapia.
The recipe is incredibly easy, and I was happy because I had blanched almonds on hand to grind into almond meal. You can also purchase almond flour or almond meal in stores, but since I had it on hand, I was able to grind the exact amount I needed in the coffee grinder.
Almond and Parmesan Tilapia Recipe:
While grinding the almond meal, I melted the butter in a small sauce pan. I then mixed together the almond meal, parmesan cheese, Old Bay seasoning, garlic powder, and black pepper in a shallow bowl.
Then I took each filet and coated in the melted butter on both sides, followed by a dip in the seasoning mixture.
Finally I placed the pan(s) of fish into the preheated oven for appx.25 min at 400 degrees Fahrenheit.
The Almond and Parmesan Tilapia came out tender, and the coating was crispy and delicious! Remember to watch the fish because the amount of time it will take to finish will vary based on the thickness.
- 6 Tilapia filets, thawed if frozen
- ½ cup melted butter
- ⅔ cup almond meal (I used ground almond slices)
- 4 T finely grated Parmesan or Asiago cheese
- ½ tsp. garlic powder
- ½ tsp. black pepper
- 1 tsp. fish rub (optional, but recommended, I used Old Bay Seasoning.)
- Preheat oven to 425F/220C. Spray baking dish with non-stick spray.
- Melt butter over low heat. (Grind almonds in coffee grinder, blender, or food processor if making your own meal). In a flat dish or plate, mix almond meal, Parmesan, garlic powder, black pepper, and fish rub.
- Dip each filet in butter, coating each side, and then dip into almond-parmesan mixture.
- Bake 20-30 minutes, or until fish is firm to the touch and coating is turning golden brown. The baking time will depend on the thickness of the fish
